Kalandrakas

A plain and original chicken pasta soup from the Southern Tagalog area. You can cooked with alternative of vegetables and pasta in rich and delicious chicken or beef soup.

Ingredients:

  • 250 Grams shell pasta
  • 2 Pieces chicken breast
  • 1 Carrot, cubed
  • 1 Potatoes, cubed
  • 6 cups water
  • 1/2 Cup chopped cabbage
  • 1/2 Cup chopped Chinese cabbage
  • 1 Onion
  • 1 Garlic
  • 1 Can evaporated milk
  • Salt and pepper to taste

Cooking Methods

  • In soup pot, bring chicken breast and cold water to a boil.
  • When its cool enough to handle, hand-shred the meat and set aside.
  • Heat oil in a large saucepan and sauté garlic until lightly brown, then add the onions.
  • Add the shredded chicken and sauté until slightly brown.
  • Pour in the chicken stock and bring the liquid to a boil.
  • Add the shell pasta and simmer for 5 – 10 minutes or until tender.
  • Add carrots and potato and continue to simmer until soften.
  • Pour the evaporated milk, keep stirring and season with salt and pepper.
  • Add the cabbage and Chinese cabbage and continue to simmer for 2 minutes.

How to prepare Binagoong Kangkong

Binagoong Kangkong

Basic Ingredients

  • 2 Bunches of water spinach (kangkong)
  • 3 Cloves garlic
  • 1 Teaspoon vinegar
  • 1 Tablespoon shrimp paste
  • 1/4 of pork belly
  • 1 Teaspoon sugar

Cooking Methods

  • Put pork into a medium pan and add a little bit water to completely cover the fat.
  • Bring to boil over high heat, then lower to medium and literally boil the oil out of the fat, stirring occasionally.
  • When pork are golden brown, remove and set aside.
  • The same pan and pork oil, saute garlic, onion until wilt.
  • Add the shrimp paste and stir cooking for a few minutes.
  • Add pork, sugar and vinegar, don’t stir and let it sizzle for a few minutes.
  • Saute the Kangkong leaves for a few minute or until done.
